Dairy Delectables: Cheese Souffle, Green and Blue Salad, Lokshun, Tofu Sour Cream, and Imjibinah (Moroccan Egg and Cheese Turnovers)
Milk and honey recipes are a wonderful treat and widely varied. If you don’t eat dairy products or cow’s milk for health or ethical reasons, there’s plenty of tasty substitutes readily available. Soy products are a great alternative to dairy and healthy too. Soy has been thought to be a possible preventive measure in breast cancer and helpful with menopause symptoms. So if you or a loved one are lactose intolerant, a vegan, etc., don’t fret – there are still Shavuot options for you!
Super Easy Cheese Souffle (Dairy)
Preparation Time: 1 hour
Baking Time: 1 hour
Ingredients
4 eggs
2 1/2 cups milk or soy milk
1 teaspoon garlic
1 teaspoon mustard
1/2 teaspoon tamari or soy sauce
2 Tablespoon minced onion
1 teaspoon oil, butter, or non-stick cooking spray
8 ounces of cheddar or soy cheddar cheese
8 slices of your favorite bread
Beat eggs well. Add milk, garlic, mustard, and tamari. Whisk together well. Add minced onions and stir well. Grease a casserole dish with butter, oil, or spray. Line the bottom of the dish with bread. Slice cheese and cover. Add another layer of bread and rest of cheese. Pour egg/milk mixture over bread and cheese. Let sit at least one hour at room temperature or overnight in the refrigerator. Bake at 325 degrees for one hour.
Note: Don’t open the oven too much or it won’t rise. Serve with a green salad for a complete meal.
Green and Blue Salad (Pareve)
Preparation Time: 15 minutes
Ingredients
- 1 head of green or red leaf lettuce
- 1 medium red onion
- 2 D’anjou or Bartlett pears
- 1/2 cup toasted walnuts or pecans
- 3/4 cup of blue cheese or sheep feta cheese
- 2 Tablespoons olive oil
- 1 1/2 teaspoons of red wine vinegar
- 1/2 teaspoon of sherry
- Fresh ground pepper
Wash and dry lettuce. Tear into medium sized pieces and place in bowl. Slice red onion thinly and add. Wash pear and cut into very thin slices. Add. Toast walnuts for ten minutes at 375 degree oven or toaster oven. After five minutes, use a spatula to turn them. Make sure not to overcook and burn. Add to salad. Crumble cheese and add. In a small bowl whisk together oil, vinegar, and sherry. Add to salad and toss lightly. Add fresh ground pepper to taste.
Quick Lokshun-liscious (Dairy)
Preparation Time: 20 minutes
Ingredients
- 1 lb. wide egg noodles (can be yolk-less egg noodles)
- 1 Tbs. butter or margarine
- 1/4 cup maple syrup
- 1 1/4 cup yogurt, sour cream, or mix of two, or dairyless sour cream (see recipe below)
- 1/2 cup raisins
- 1 can pineapple, drained (or fresh equivalent, cubed)
- 1 cup blueberries, blackberries, or raspberries
- 1 1/4 teaspoon cinnamon
Cook egg noodles as directed. Rinse in warm water. Add butter and mix until melted. Add all other ingredients and mix well. Adjust cinnamon and syrup to taste. Can be served warm or cold. Serves 4-6 people.
Tofu Sour Cream (Dairy or Pareve)
Preparation Time: 10 minutes
Ingredients
- 1 pound tofu (soft or silken variety)
- 2 Tablespoons lemon juice or rice vinegar
- 1 Tablespoon honey
- 1/4 cup oil
- 1/2 cup yogurt (optional)
- 1/2 teaspoon salt
Blend all ingredients together well in food processor or blender until smooth. For a more “ricotta cheese” product, leave out the yogurt and oil and blend until tofu is just crushed, not smooth.
Imjibinah–Moroccan Egg and Cheese Turnovers (Dairy)
Preparation Time: 20 minutes
Baking Time: 10 minutes
Ingredients
- 8 ounces of panir cheese (see recipe below)
- 1 minced onion
- 2 cloves minced garlic
- 1 small bunch of parsley chopped fine
- 4 hard cooked eggs
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon salt or salt substitute
- 1/2 teaspoon black pepper
- 1 package of pastry dough or your own favorite pastry recipe
Syrup
- 3/4 cup honey
- 2 cinnamon sticks
- 1/2 cup water
If you can’t find panir cheese, see recipe below. The panir should come chopped in small pieces. Chop the eggs and mix with cheese, onion and parsley. Add spices and mix.
Lay out pastry dough. Cut into approximately four-inch rounds or equivalent squares. Put tablespoon of mix on one side of the dough. Fold dough over and pinch close. Can be deep fried or baked at 400 degrees for about 10-15 minutes or until dough is golden brown.
Mix together syrup ingredients and simmer for five minutes. Take tongs and dip in the turnovers until soaked with syrup. These can be served hot or cold.
Panir (Dairy)
Preparation Time: 3 hours or overnight
Ingredients
- 2 quarts milk
- 2 tablespoons lemon juice or apple cider vinegar
- 1/2 cup yogurt
- cheesecloth
Boil milk (careful not to scald) and reduce heat to very low. Add lemon juice and yogurt and stir until milk curdles. Remove from heat. Pour in colander or cheesecloth to remove excess liquid from cheese. Spread cheese in cheesecloth forming into a solid square mass. Place a heavy weight on it (brick or gallon container of water) and leave at least 3 hours or overnight. Cut into small 1/2 inch-1 inch pieces.
